Purchase Chilled Cucumber Soup

Chilled Cucumber Soup :
2 lb. Cucumber, peeled, seeded and diced
2 Tbsp. Green onion, diced
1/2 cup Vegetable stock
1 cup Plain yogurt
1/2 cup Sour cream
3 Tbsp. Robert Rothschild Lemon Wasabi Sauce
Salt and pepper to taste
Sour cream
Avocado

In a food processor, puree the cucumbers, green onion, vegetable stock, yogurt, sour cream, Lemon Wasabi Sauce and salt and pepper. You may need to puree in batches. Pour into a large bowl and chill in refrigerator. To serve, pour soup into bowls. Add a dollop of sour cream and a few slices of fresh avocado.

To reduce calories, use plain yogurt instead of the sour cream.
