Chilled Shrimp with Chipotle Mayonnaise :
Chilled boiled shrimp is one of the easiest, and most universally popular, party finger foods. Add a zippy dipping sauce and you're all set for a happy group of party-goers!

3 pounds (16-20 count boiled and peeled shrimp) well chilled
1-1/2 cups real mayonnaise
1 Tablespoon freshly squeezed lemon juice
2/3 cup Texas on the Plate Chipotle Chile Ketchup
Lemon wedges and parsley sprigs as garnish

Place a 2-1/2 cup serving bowl in the center of a serving platter. Arrange the boiled shrimp in an overlapping pattern around the bowl. Refrigerate while preparing the sauce. Combine the mayonnaise, lemon juice and Chipotle Chile Ketchup in a medium-sized bowl and whisk to blend well. Pour the mayonnaise mixture into the serving bowl in the center of the platter. Garnish platter with lemon wedges and parsley sprigs as desired. Serves 15 to 20 as finger food.
