Tex–Mex Rice with Rio Frio Pasilla de Oaxaca Chile Salsa :
Mexican-style rice can be a pretty boring affair. At most Mexican restaurants, it seems to be something they put on the plate to take up space since it is so tasteless! Not this version. It will wake up your taste buds and make them say "Ole!"

1 tablespoon unsalted butter
1/4 teaspoon sea salt
3-1/2 cups chicken stock
2 cups long grain white rice
2/3 cup Texas on the Plate Rio Frio Pasilla de Oaxaca Chile Sauce

Combine the butter, sea salt and chicken stock in a heavy 3-quart saucepan over high heat. Bring to a full, rolling oil, then stir in the rice and salsa. Cover the pan and lower heat to the lowest setting. Cook for exactly 15 minutes, then remove from heat and set pan aside until ready to serve. Fluff the rice with a fork before serving. Serve hot. Serves 4 to 6.
